THE MEAT INDUSTRY IN MODERN JAPAN IS PURSUED MOSTLY BY "BURAKU" PEOPLE.IT'S REASONS EXIST IN SOCIAL FACTS THAT THEY HAD HISTORICALLY ENGAGED IN TREATING DEAD COWS AND HORSES.WHILE,IT INDICATES THAT THE FREE CHANCE OF THEIR OCCUPATIONAL CHOICE HAVE BEEN DEPRIVED ACCORDING TO THE SEVERE "BURAKU" DISCRIMINATIONS.THE RELATIONSHIP OF MEAT INDUSTRY AND DISCRIMINATED "BURAKU" (DISTRICT) IS RELATIVELY DIFFERENT BETWEEN KANSAI REGION AND KANTO ONES.IN KANSAI,THE MEAT INDUSTRY ADHERES VERY CLOSELY TO "BURAKU" AREA.BUT IN KANTO,IT'S CONNECTION IS NOT OBVIOUS SUCH AS KANSAI REGION.THE EMPLOYMENT ESTATES OF WORKERS IN MEAT INDUSTRY TAKE VARIOUS FORMS ; CIVIL SERVANTS, EMPLOEES OF PUBLIC CORPORATION, OR ONES OF PRIVATE BUSINESS.HOWEVER, THE SUBSTANTIAL UTILIZERS OF TOJYO ("SLAUGHTERHOUSE") ARE MANAGERS OF "BURAKU" PERSONS.BECAUSE THE "BUTCHERY" WORKS HAVE ARTISAN CHARACTER, MAJORITY OF SENIOR WORKERS MAINTAIN A SORT OF CRAFTSMANSHIP.AND SO,THEY CAN NOT ADAPT THEMSELVES TO THE REGULAR WORKTIME.
