Started with the study on the accelerating substance for alcholic metabolism in the flowers of Pueraria lobata, a lot of leguminous plants, Puerariae Radix, Desmodii Herba, Abri Herba, Sophora Subprostratae Radix, Sophorae Radix, were chemically investigated to provide many new oleanene glycosides composed of the oleanene sapogenols carrying the methyl group at C-17 and the E-ring substituted with oxygen function group (s) and the oligoglycosidic moiety including glucuronic acid as a structural feature. These glycosides have not ever been obtained so many. Through the past studies, we presented total twenty-one new sapogenols and over fifty new glycosides from these plants. In parallel to this chemical study, they were subjected to anti-hepatic injury in vivo test using CCl_4 method. These glycosides were shown to be effective for liver diseases. Moreover, it also became clear that they possess anti-cholesterolemia. We succeeded to get the oleanene glycosides effectively from the abondoned aerial parts of Glycine max in order to develop and apply to functional foodstuffs. Moreover, the saponin of Albizziae Cortex and chemistry related to the coloring matter of Pterocarpus santalinus will be also presented.
