Research Abstract |
N^ε-(carboxymethyl)lysine was formed in glycoxidative human serum albumin (HSA), butnot in oxidative HSA. Glycoxidation and oxidation of HSA significantly decreased the contents of free thiol groups. The antioxidant activity of glycoxidative HSA to LDL-oxidation was the lowest among various modified HSAS. Oxidative HSA showed a moderate decrease in antioxidant activity.
