Collagen is the main protein that composes the organ, skin, bone and etc. The majority of the amino acid that composes collagen was not the essential amino acid, and the score of the amino acid, which is the criterion as the nourishment element of the protein, is zero. However, collagen is used for the supplement for joint syndrome and anti-aging of skin. In this research, the metabolism of collagen and its function were investigated. After treatment of collagen to rats, the amount of free-hydroxyproline in blood raised at 30minits later and flatted at 6 hours. In osteoporosis model animals, treatment of collagen result in the increase of that bone mineral density, and bone matrix protein. Especially, the amount of type I collagen and glycosaminoglycan in bone matrix were raised. These results were reported in J.Japn. Society of food engineering, 23 1 34-141, 2003. Type I collagen were prepared from pig and shark skin. The effect to osteoporosis model animals were experimented. Both collagens gave a good effect on the bone mineral density. That effect of shark collagen was better than that of pig collagen. In the skin shrinking model, treatment of collagen caused to make thicker the derma and to regulate collagen fibril formation. It is considered that collagen is one of the good material for the improvement of osteoporosis and the anti-aging of skin.
