Outline of Annual Research Achievements

本研究では、分光画像手法および励起蛍光画像法により、魚の安全性に関する計測手法に関する研究を行った。具体的には、鮮度計測の具体的ターゲットとして、鮮度に関する知見が豊富なマアジ(Trachurus japonicus)を対象に選び、冷凍状態のマアジの鮮度(K値)を非破壊で計測することを目標として実験を実施した。
一定期間(0-12日間)、冷蔵庫(5℃)に保存したサンプルを-28℃で冷凍することで様々な鮮度のサンプルを準備した。その冷凍サンプルの蛍光指紋(EEM)を計測するとともに、計測部位から計測試料を抽出し、理化学分析によってK値を求めた。非破壊計測によってK値を推定するためには、EEMを説明変数としてK値を推定するキャリブレーションモデルを構築する必要がある。しかしながら、説明変数に比べサンプル数が十分多くないことから、例えばPLS回帰分析などの手法を用いる必要がある。
本研究ではこうした従来の次元削減手法に対して、我々が提案している波長帯域最適化手法を適用し、それら両者の推定精度の比較を行った。その結果、全ての波長帯域の情報を用いたPLS回帰分析に比べ、提案手法は精度も高く、さらに計測コスト(計測回数と所用時間)を大幅に削減できることがわかった。この成果によって、(1) 鮮度を非破壊で実用的に十分な精度で計測する手法を確立することが可能、(2) さらに、対象が冷凍状態であっても計測可能、(3) 計測時間を大幅に削減できることから、現場で利用可能なシステムのコア技術となり得ること、を示すことができた。
