Focusing on the immune-modulating functions of food factors, we searched for those inducing or activating regulatory T cells (Tregs) or regulatory B cells (Bregs), which have immune-suppressive functions. The mechanisms of action of the food factors and anti-inflammatory activity in vivo were investigated. We found several flavonoids having such an immune-modulating functions, and observed the suppressive effects of these factors on an animal model of inflammatory bowel diseases. Food factors with immune-suppressive functions are expected to prevent or ameliorate allergies and also lifestyle diseases developing on the basis of chronic inflammation.
