Outline of Final Research Achievements |
Our studies in mice and trained panel suggested that cholesterol does not have post-ingestive effect for fat preference, but affects for fat preference via odour. According to analysis of volatile compounds using gas-chromatography-mass-spectroscopy, cholesterol affects fat odour, which is due to reaction with impurities other than triacylglycerol molecules. Furthermore, our study indicated that cholesterol fatty acid esters were considered to be one of potent contributor for fat preference, whereas we cannot clarify the effects of cholesterol fatty acid esters on fat preference in detail.
