Outline of Annual Research Achievements

近赤外分光分析は、当該光の高い透過性に着目し、対象物からの拡散反射光等から統計解析で情報を抽出することにより、内部品質を非破壊で予測する手法である。本研究では、市販のウインナーソーセージを試料として研究を行い、応用範囲の広い、可視近赤外分光分析による食肉加工品品質の非破壊判品質評価法について検討した。
ウインナーソーセージの鮮度および腐敗と関係の深いアデノシン-5’-三リン酸(ATP)濃度の非破壊推定を試みた。75個の試料を、35℃で1、3、5 d貯蔵し、380~1000 nmの波長範囲の可視近赤外領域におけるハイパースペクトル画像を5 nmごとに測定した。分光吸収/反射スペクトルあるいはその前処理した結果を説明変数として、偏最小二乗回帰分析(PLSR)でATP予測モデルを作成した。その際、供試試料を検量用と予測用に分割した。
全測定波長のデータを入力変数に用いた結果、Standard normal variate (SNV)で分光分析データを前処理したモデルが最も予測精度が高かった。すなわちSNVでの前処理が、ATP濃度予測モデルの構築には最も有効であったと考えられた。次に重要な選択された10波長(385, 390, 395, 505, 580, 670, 745, 780, 855, 955 nm)での分光分析データを入力変数とした、機械学習によるATP濃度予測精度の結果によると、元データの1次微分(1st der)と1st der+Normal (N)で分光分析データを前処理したモデルで予測精度が高く、全波長でのデータを入力した場合よりも高かった。これは、過剰なデータを入力したことによる過剰適合が抑制されたためと考えられる。
