Research Abstract

高齢社会においてニーズが高まっている物性を調整した食品の開発に資するため、食品を実際に咀嚼する条件で、口腔内にかかる圧力を直接計測することにより、口腔感覚を簡便かつ正確に評価する手法開発を目標とした。口腔感覚粘度を測定する簡易なデバイスを設計し、口腔内で検出された力学的性質の食品による差異や健常者と摂食機能障害者との差異を解析することができた。
