Decreased salivary secretion is one of the main causes of taste disorder. It has been reported that improving salivary secretion function using umami stimulation may be a safe and reliable treatment for taste disorder. In the present study, we examined the relationship between the recognition threshold of umami and sour taste and the flow rate both of total and of minor saliva by gustatory-salivary reflex in Thai subjects with low sensitivity to umami in order to compare the data with those of Japanese subjects with high sensitivity to umami. The results suggested that umami stimulation was effective only for elders with hyposalivation, while acid stimulation was effective for all participants. These results suggest that acid stimulation is more effective than umami stimulation in taste disordered subjects with low sensitivity to umami threshold.

| Academic Significance and Societal Importance of the Research Achievements |
我が国では、急速な高齢化を背景とした味覚障害患者の増加が社会問題となっている。味覚障害は単に味が判らないという症状ではなく、食欲低下による体重減少、さらに低栄養状態を惹起する全身の健康に深く関わる重要な疾患である。我々は既に、日本人において、うま味刺激が強い唾液分泌能を有することから、唾液分泌低下による味覚障害に対しうま味刺激が治療法の1つになる可能性を示唆した。本研究において、うま味に低感受性を示すタイ人では、うま味刺激が唾液分泌低下のある年長者にのみ有効であるのに対し、酸刺激はすべての参加者に有効であった。唾液分泌低下による味覚障害に対し酸刺激が有効であるという新たな知見が得られた。
