Outline of Final Research Achievements |
This study tests the hypothesis that crustacean food allergy should involve an IgE-mediated allergy and other mechanisms. Crustacean hemocyanin (CHM) induced inflammatory responses human THP-1 monocyte and macrophage cells. Dermal patch with CHM and allergen tropomyosin aggravated allergic responses of allergy model mouse. Phage display and bio-panning using THP-1 cells found that inflammatory peptide sequences would be included in many kinds of foods.

Academic Significance and Societal Importance of the Research Achievements |
現在のように動物タンパク質源が確保できる状況では,「甲殻類を食べない」という選択が可能であるが,FAO が提唱するように将来的な動物タンパク質供給手段として昆虫食が重要となる可能性も高い.甲殻類アレルギー患者が非常に高い確率で同じ節足動物門に属する昆虫類にも強いアレルギー反応を示す事実から考えると,本研究で想定している甲殻類アレルギー患者は,昆虫の摂取ができない可能性が非常に高い.本研究の成果は,甲殻類の処理方時あるいは調理時に経皮感作をできるだけ予防する方策が有効であることを示している.これらは,昆虫食で支えるかもしれない将来的な食料対策の一助となる.
