Outline of Final Research Achievements

Pyroglutamyl peptides, which are abundant in Japanese traditional fermented foods, have anti-inflammatory effects. The combination of 3 or more different type of pyroglutamyl peptides but not single peptide suppressed the production of nitric oxide (NO) in RAW264.7 macrophage cells. Then we developed pyroglutamyl peptides-rich fermented rice drink. Oral administration of this rice drink improved colitis and gut microbiota in DSS-induced colitis model mice. For human study, the healthy participants were randomly distributed in a crossover, double-blind comparative manner. Thought there was no significant change in microbiota before and after intake of fermented rice drink in the group, only the subjects, who showed particular pattern of microbiota, demonstrated apparent change after peptide rich-drink intake. Taking several pyroglutamyl peptides derived from foods including Japanese traditional fermented foods, might be beneficial to health.

Academic Significance and Societal Importance of the Research Achievements

和食は2013年にユネスコの無形文化遺産に登録され、一汁三菜のバランスの取れた食事が健康増進、長寿に寄与していると考えられているが科学的に十分に実証されているとはいえない。今回の研究では和食・日本食に使用される伝統的発酵食品・調味料に特異的に含まれるピログルタミルペプチドに注目し、抗炎症作用や腸内細菌叢改善作用を示した。これらの結果は、和食・日本食の機能的な側面を一部解明している。近年、食のいわゆる欧米化が進んでいるとされるが、和食・日本食の良さを見直し、食料自給率の上昇を促進したり、消費量が低下している味噌や醤油の発酵食品の消費量を回復したりするきっかけとなればよいと考えている。
