In Japan, most GIs are designated for fresh, minimally processed, and seasonal produce. This differs from Europe, where historically processed products sought GI protection. Debates have arisen in Japan, similar to early 20th-century France, regarding delimitation, specifications, and the abandonment of previously obtained GIs. The comparative research reveals that simply associating with a terroir is insufficient in guaranteeing or communicating product quality through GIs. Paradoxically, GIs primarily emphasize geographical origin, lacking a focus on quality within the legal framework, while consumers consider it crucial. This ambiguity is evident in Europe with many conflicts over certifications. Similarly, in Japan, the use of sui generis GIs is shifting the balance of quality recognition, potentially reviving a cultural sensitivity similar to the French notion of terroir. A sociocultural approach linked with the food mediation is needed to further explore this matter.
