Research Abstract

乳酸菌は機能性が注目されている共役リノール酸をつくる。ここでは、リノール酸から共役リノール酸への変換に関わる一連の酵素系を解明し、乳酸菌による共役リノール酸生産を確立した。さらに、油糧微生物の遺伝子操作や変異処理により、機能性が高い高度不飽和脂肪酸やステロール類の発酵生産技術を確立した。これら機能性脂質は、医薬・健康食品としての利用が多いに期待されるものである。
