Research Abstract

鶏肉等の食肉タンパク質の酵素分解物中に、強い抗酸化活性を有するペプチドが存在することを明らかにした。この分解物を経口投与した場合には、抗ストレス作用や抗疲労作用が認められた。また、コラーゲンを多く含む畜産副産物の酵素分解物についても検討を加え、糖質の添加と加熱により保健的機能性だけでなく嗜好性向上効果も有する素材の開発につながる成果を得た。一連の研究成果は、食肉等を原料とする新しい食品の誕生につながるものである。
