Research Abstract

高栄養食品である豚肉を用い、超高圧処理によるゲルを調製し、物性値、タンパク質組成の分析、微細構造観察から、高圧力が畜肉タンパク質のゲル形成機構に与える影響を調べ、官能評価および嚥下造影検査を行い、高圧処理畜肉ゲルの嚥下食への利用性について検討した。高圧処理畜肉ゲルは加熱処理よりも嚥下食として適応するものであり、畜肉タンパク質のゲル形成機構に及ぼす高圧処理の効果であることが明らかになった。
