Research Abstract

本研究では、やけ肉発生のメカニズムをタンパク質分解の観点からアプローチした。まず、やけ肉モデル魚を作成し、やけ肉魚とコントロールの魚を用いて、魚筋肉の分解を調べた。やけ肉発生に伴い、筋形質画分ではカテプシンB活性が増大することを明らかにした。また、筋原線維タンパク質は新規の筋原線維結合型のメタロプロテアーゼ(MBMP)が働き、これを分解することが明らかとなった。MBMPは新規の酵素であり、この酵素の構造と機能を調べる必要が急務であると考えられた。
