| Research Abstract |
食品および食品原材料から直接、真菌のアフラトキシン生合成に関与する酵素の遺伝子をマルチプレックスPCR により検出し、食品のアフラトキシン汚染を迅速簡便に診断する方法を開発した。その結果、今回収集した食品のアフラトキシンBG 汚染は59 検体中15 検体(25.4%)であったが、遺伝子検出法では27 検体(45.8%)からBG 産生酵素の遺伝子が検出された。以上から、アフラトキシンBG 汚染は考えられているより広範囲の食品に発生する危険性があること、また、その原因菌としては高いアフラトキシンBG 産生能をもつA.parasiticus とA. nomiusが関与している可能性があることが明らかになった。
