栃木県と埼玉県の清酒製造業をおもな事例として,従来型の酒造出稼ぎ人が減少した背景と,それによって生じている労働組織・労働形態の変化,技術継承の新たな試みなどを,近現代の長期的な視点から調査・分析した。
