Research Abstract

抗酸化・ラジカル捕捉能に着目し、ゲルゾル境界線の食品に抗酸化能を付与あるいは増強する加工調理手段を確立することとした。ラジカル捕捉能の評価はアゾ化合物と化学発光を組み合わせた系を用い、寒天・リンゴのすりおろし・大根・長いも・カラギーナン・ローカストビーンガム・ゼラチンによるとろみを付与した調理加工品を試作し評価した。その結果、食材と増粘剤との組み合わせにもよるが、概して増粘剤が存在するほうが、捕捉能が維持されることが判明した。このことは、スクロースとアスコルビン酸とのモデル系においても確認できた。
