| Research Abstract |
冷凍食品、肉類および魚介類の解凍過程を、1テスラ小型MRIを用いてMRイメージとNMRスペクトル変化によって解析した。末端店頭保存温度(-18℃)で、冷凍豚肉では油脂の一部が、冷凍牛肉では筋肉の水の一部が未凍結で、変質を起こす可能性を残していた。筋肉の水が先に、油脂は遅れて融解し、解凍における問題であるドリップは筋肉の完全解凍後に発生した。冷凍魚類では解凍中に微細組織構造の壊変が起こると考えられた。
