Research Abstract

グライセミックインデックス(GI : Glycemic Index)とは食品摂取後の血糖値上昇の程度を示した値であるが、血糖値はインスリンの分泌によって大きく変動すると考えられる。本研究は、食品摂取後の血糖値の変動よりグルコース処理能力を表すグルコースクリアランスを算出し、得られたグルコースクリアランスよりグライセミックインデックスとインスリンの作用を忠実に反映した糖質利用率を算出する方法を確立することを目的にして行われた。
