Research Abstract

本研究は、まずイチゴ23品種の果実の香りの特徴を明らかにするために、パネリストによる直接鼻で嗅いだ時および咀嚼時のイチゴ果実全体の香りの印象とにおい特性の評価を行なった。次に、それら品種の中から特徴的な香気有する品種7品種を用いて、イチゴ品種に共通して存在し、イチゴの香りのベースとなる香気成分(共通香気成分)と、品種の香りを特徴付ける香気成分(特徴香気成分)を決定し、これら香気成分の標準品を用いて各イチゴ品種の香りを再現・検証するため、「PorapakQカラム抽出・濃縮法によるイチゴ果実揮発性成分の分析」、「Aroma Extract Dilution Analysis(AEDA)・Aroma Extract Dilution-Strip Analysis(AED-SA)による香気成分の評価」並びに「標準品を用いたイチゴ香気の再現と検証」を行った。結果は、全7品種から揮発性成分を160成分同定し、香気成分を98成分感知した。98成分中、品種共通香気成分であり、香りのベースとなる香気成分(重要香気成分)は、綿菓子様の甘い香りを有するFraneol、カンキツの香りを有するLinalool、草様やカメムシ様など青臭いにおいを有するcis-2-nonenal、trans,cis-2,6-nonadienal、モモやココナッツミルクなどのラクトン系香気を有するgamma-decalactine、gamma-dodecalactine、汗のにおいを有する2-methyl butanoic acid、金属・ガス臭のにおいを有する香気成分(未同定)、並びに汗のにおいを有する香気成分(未同定)、の9成分を確定した。また、重要な品種特徴香気成分は23成分を確定した。
以上の実験結果を基に標準品を用いて香りを再現し、抽出液と比較・検証した結果、とよのか、久留米IH1号及びペチカは香りの印象や類似度が高く、再現が可能であることが判明した。
