Research Abstract

ヒトの腸管に住んでいる安全性の高い乳酸菌は、抗菌物質を生産し、整腸作用や食品保存に貢献している。本研究では、乳酸菌によって作られるタンパク質性の抗菌物質(バクテリオシン)に着目し、熱や酸に安定性を与えるタンパク質(通常は一本の鎖状で存在している)のリング(環状)構造形成に関わる因子(遺伝子)を特定することに成功した。本成果は、世界で初めての事例であり、現在、論文を作成中である。
