Research Abstract

植物ポリフェノール類(カテキン類)が生理機能を発揮するためには、生体成分、特にリン脂質二重層に対する相互作用が重要であると考えられる。本研究では、NMRを用いてカテキン類のリン脂質膜中における存在位置や動的挙動を明らかにした。さらに、植物ポリフェノール類のリン脂質膜に対する親和性を、リン脂質カラムを備えたHPLC 測定によって数値化する評価系を構築した。
