Research Abstract

水産資源の枯渇が危惧されているとともに地球環境の保全が火急の課題となっている現状を踏まえ、本研究では水産加工の際に廃棄される残滓や品質低下したすり身などの有効利用について検討した.主として研究した課題は、加工場から廃棄されるマグロヒレから抽出したゼラチンの組成と性状、魚類皮から調製したゼラチンを用いた可食性フィルムの性状、可食性すり身フィルムの最適調製法、本フィルムの機械的性状、水蒸気透過性、酸素透過性、抗酸化能をはじめとした各種性状の解明と改善である.
