Research Abstract |
抗酸化能を高め、副作用の少ない抗酸化剤、特にポリフェノール類の探索・開発とその抗酸化機構の解明を行い、新規レスベラトロール誘導体を開発しそのラジカル消去機構を電子移動と引き続くプロトン移動による機構であることを明らかにした。また放射線防護剤の開発を、被ばく後の酸化的障害の回復という観点から行い、ミネラル含有熱処置酵母とトコフェロール、およびトコトリエノールのN,N-ジメチルグリシンエステル誘導体が被ばく後の障害回復に有効であることを見出した。
