Research Abstract

水溶性ビタミンである葉酸はヒトにとって必須の栄養素であるが、近年、葉酸の摂取量低下と種々の疾病との関連や胎児発育における重要性が報告され注目されている.本研究では、ラットを用いて葉酸化合物の吸収動態について基礎的検討を行った.また、葉酸の吸収に関与しているグルタミン酸カルボキシペプチダーゼに及ぼす食品の影響について検討し、緑茶が本酵素を阻害することを明らかにした.
