Research Abstract

東南アジアの発酵食品からプロテアーゼ産生微生物を分離し、米アレルゲンタンパク質分解能について検討を行った。米抽出タンパク質を基質とした時、強いプロテアーゼ活性を示した菌株はBacillus subtilis, Bacillus Megaterium, Bacillus cereus, Bacillusflexusであった。また、分離微生物から産生されたプロテアーゼは、米アレルゲンタンパク質に対し強い分解能を有することが示唆された。
