Research Abstract

現在プロバイオティクスとしても多く利用されている乳酸菌の脂質代謝や脂肪酸代謝はほとんど明らかにされていなかった。申請者は、乳酸菌を用いた共役リノール酸生産法の開発を行っており、その詳細な生化学的解析を通じて乳酸菌の脂肪酸代謝の一端を明らかにした。また、多くの研究が行われている好気条件下では得られなかった新規な脂肪酸変換反応を、嫌気性微生物を用いて探索した結果、産業用途のある、あるいは医薬品の原料となりうる脂肪酸の水酸化反応を見出した。
