Research Abstract |
糖尿病などの肥満に伴う炎症性疾患の発症メカニズムの解明と日本型食品由来成分によるその制御を目的に、野菜を中心とした日本型食品中より機能性成分を探索した。その結果、カレーの香辛料であるフェヌグリーク中のジオスゲニン、トマトの果皮に含まれるナリンゲニンカルコン、松樹脂に含まれるデヒドロアビエチン酸が脂肪組織の炎症反応を抑制する活性を持つことをそのメカニズムとともに明らかにした。さらにナスからは脂肪酸関連の新規候補物質を見出した。
