Research Abstract

食物アレルギーを誘発する成分は、食品を構成する多種多様な成分の中でもある特定のタンパク質であると推定される。本研究では、わが国における食物アレルギーの発症率及び重篤度の高いものの中で、主要抗原が塩不溶性のため、これまでに解析の研究が進んでいない小麦、大麦、ライ麦等の穀物中の主要抗原について2次元HPLCシステムを利用したプロファイリング分析を試みた。
