| Outline of Research at the Start |
本研究の目的は、多様な日本古代菓子について日本と大陸での実態を明らかにし、古代菓子を再現して活用することである。日本古代菓子の起源、伝来、実相、展開と変質を実証的に研究し、古代菓子の大陸におけるルーツと大陸に対して甘味料の甘葛煎は日本独自という由来を解明する。その過程で得られた情報から古代菓子を再現する。甘葛煎は菓子だけでなく平安時代に利用された薫物を再現する。再現した古代菓子や甘葛薫物の活用と普及を目指す。
菓子は大陸の儀礼や行事とともに伝来した。その用法を食儀礼や修法を含め検討する本研究は、東アジアの食膳研究解明の第一段階である。次いで食膳形態や箸匙の使用法へと発展が見込まれる。

| Outline of Final Research Achievements |
The purpose of this study is to clarify the actual state of ancient confectioneries based on historical documents and to reconstruct and utilize ancient confectioneries based on the results of this study. In particular, we focused on the introduction and change of the confectionery. Confectionery-like shaped cray object have been excavated from the Kofun period site. And more, in the early Nara period, confectioneries of continental origin already had Japanese names. Most Heian period confections were in existence during the Nara period, but their ingredients and forms had changed. Ancient confectioneries based on historical documents were reconstructed as “Ancient Sweets” and served to the general public. Amazurasen, a sweetener produced throughout Japan in ancient times, could be replicated from ivy (natuzuta) in Nara, Iwate, Miyagi, Tokyo, and Shimane. And it was used to make incense (takimono). If the taste of Amazurasen could be replicated, it would be put to some effective use.

| Academic Significance and Societal Importance of the Research Achievements |
歴史学的に古代菓子の史料を見直して、菓子の材料や姿形を明らかにし、それを根拠に菓子のレシピを作った。そして古代スイーツとして再現し、レシピを公開して一書も成した。古代甘味料の甘葛煎は、厳冬期のツタの樹液を煮詰めて製造している。この体験は、一般の人だけではなく奈良市内の小学校の総合学習でも実施した。また入手しやすい材料で甘葛煎の味を作り出すことに取り組み、奈良市内の飲食店とも協業し、新名物の創出を意図した。食を通して古代の歴史や社会を知るきっかけとなり、食育や歴史教育など、歴史的イベントなどでの使用により、地域活性につながる。本研究成果は学術だけでなく広く社会に貢献できると考える。
