| Outline of Research at the Start |
要介護高齢者が入所する施設の給食は、災害関連死を防ぐために重要であるが、災害時に食形態の合った、高栄養の嚥下調整食を提供することは容易ではない。そのためには、備蓄やマニュアルの整備とそれを使用した食事提供・実食訓練が必要である。そこで本研究は、熊本県内の高齢者施設の給食担当者を対象に質問紙調査を実施し、熊本地震の経験を教訓とした備えと取り組みの現状を把握する。その結果をふまえて、災害時のモデル献立・備蓄品リスト・給食マニュアルを作成し、施設での食事提供・実食訓練によって、その実効性を評価する。

| Outline of Final Research Achievements |
We developed the "Write-In Guide for Preparing Emergency Food Service Manuals for Nursing Homes" and "Action Cards for Meal Service Drills," which clearly indicate the actions to be taken in each situation. A questionnaire to evaluate them was sent to registered dietitians or dietitians in nursing homes in Kumamoto Prefecture, which had experienced damage from earthquakes and floods. The Guide as a whole and the flowcharts and indications of measures for each situation in the Action Cards were highly evaluated for readability and usability. On the other hand, the survey also revealed that it was difficult for them to stock food for staff and to increase in volume the supplied stockpiles due to lack of space and budget, and it took time to prepare and introduce the manual because it required discussions with the facilities and contractors.

給食BCP（事業継続計画）は，地域継続の観点からも非常に重要な機能を担い，サービスを止めないよう継続させ，もし止まっても，目標とする時間内にいち早く正常な状態に復旧させるために必要なものである。その備えのためにも，本研究の成果物である書籍「福祉施設・病院等における給食BCP導入の手引き」を参考に給食BCP の作成に取り組んでもらうことで，１日３食提供できなくなることや食事内容の乏しさによる病状の悪化や災害関連死を防止することにつながる。
