本研究は古代食の食品や調理法の復元を行い、その栄養学的な分析から古代における食事と生活習慣病の関係までを探るのが目的である。 文献史料から古代の食品を検証し、食器・調理具である土器を器形や内部の使用痕を調査し、残存脂質やコゲなどの理化学的分析も行って古代食の復元を行う。また説話・絵巻物などの資料も視野に入れ、民族学的な調査も行って古代食の実態を解明する。その上で復元された古代食の栄養分析を行い、古代における食事と生活習慣病の関係までを解明しようとするものである。

| Outline of Final Research Achievements |
The purpose of this study is to reconstruct ancient food through culinary science from materials derived from historical documents and archaeological historiography, and to elucidate the relationship between ancient food and lifestyle-related diseases from its nutritional value. Therefore, the purpose of the research was to compare the food environment not only in Japan but also in Eastern Eurasia. However, due to the influence of the Corona disaster, overseas research could not be conducted, and the original research plan and target were changed to Japan. As a result, by re-examining the results of the excavation of the ruins of the Saidaiji Jikidouin, we were able to elucidate the actual state of meals at ancient temples. In addition, in collaboration with bonito flakes manufacturers, mainly in Shizuoka Prefecture, we reproduced the manufacturing method of ancient hard fish products, proving that the bonito culture, which is the origin of Japanese food, dates back to ancient times.

| Academic Significance and Societal Importance of the Research Achievements |
コロナ禍の影響で海外調査が行えなかったため、国内で調査や実験を行った結果、新たな研究ができた。まず西大寺食堂院跡の発掘調査成果を再検証し、従来寺院では禁忌とされていた魚肉を食していたことを証明し、古代の食の実態を解明することができた。また静岡県西伊豆町の鰹節製造業者と共同研究を行い、古代の堅魚製品の再現に成功した。その結果カツオが和食文化の原点である出汁として認識されていたのが、さらに古代までさかのぼる可能性があることを示した。さらに奈良県の酒造メーカーとも古代酒の醸造実験を行った。このように古代の食の再現を産学連携で行ったことは、研究成果の社会への還元という点で大変意義がある。
