| Outline of Research at the Start |
近年、フードバンク活動に食品ロスの削減が期待されている。しかし、フードバンク活動を通じて寄付食品を支援に活用するのであれば、それを適切な品揃えへと変換するための輸送や保管が必要となる。食品ロス削減、フードバンク活動の先進地であるフランスでは、この過程にさまざまな中間組織体が介在している。そこで本研究課題では、この一連の流れをフードシステムとして捉え、第1にこれらの中間組織体における流通機能の分担のあり方を、第2にそれらが事業を持続できる存立基盤を明らかにする。さらに、このシステムには残品の受け皿が必要であり、そこで第3に、食品ロス削減における飼料化事業の存在意義についても考察する。

| Outline of Final Research Achievements |
To reduce the generation of food loss and effectively redirect surplus food toward food assistance, it is essential to bridge both spatial and temporal gaps that exist between donation and utilization. Moreover, it is necessary to reconfigure the volume and assortment of donated food, which often arrives in aggregated forms. However, existing discussions in Japan concerning the relationship between food loss prevention and food banks have largely neglected this perspective. Given the precarious operational foundations on which many food banks function, it is difficult for them to address these challenges independently. Accordingly, intermediary organizations that facilitate the linkage between food donors and food banks play a vital role.

| Academic Significance and Societal Importance of the Research Achievements |
本研究課題は、これまでの食品ロス発生抑制とフードバンクなどによる食料支援の関係における寄付と利用の間に存在する空間的隔たり、時間的隔たりの橋渡しと、集塊物たる寄付食品について量と組合せの変換について着目することで、新たな研究視点を提示した。
コロナ禍などにより研究計画の変更を強いられたが、期待以上の知見が得られた面もあり、今後、先進地域の食品事業者とフードバンクをつなぐ中間事業者の研究、リサイクル飼料製造における展望と課題についての研究を展開する基盤を一定程度つくることができた。
