Outline of Research at the Start

本研究では、乳酸菌の抗真菌性に着目し、真菌をターゲットとした「バイオプリザバティブ（食品保蔵因子）」と「プロバイオティクス（保健機能因子）」の両面で食品利用可能な乳酸菌株の単離・選抜・同定（1年目）、選抜菌株が産生する抗真菌物質の単離・精製・同定（2-3年目）、選抜菌株の効果についてのin vitroおよびin vivo評価（2-4年目）を行う。
