| Outline of Research at the Start |
ワルファリン内服患者ではビタミンKを多量に含む食品の摂取は禁じられ、納豆はその代表格である。しかしながら、納豆摂食を望むワルファリン内服患者の声は根強く、当研究グループは10年余に渡ってワルファリンの薬理作用に干渉しない納豆の新規開発を進めてきた。本研究では、当研究グループが独自開発したビタミンK低減化納豆を用いて、「ワーファリン内服患者が安心して食べられる機能性食品、『低ビタミンK納豆』」を世に送り出すための最終的なワーファリン内服患者による多施設長期摂食臨床試験を実施する。患者のquality of life向上に寄与する、臨床・食品工学共同研究の総仕上げのプロジェクトである。
