Outline of Research at the Start

鮮度は魚類の品質評価における重要な評価基準であるため、消費者に届く前に鮮度判定を行う必要がある。また、店舗における鮮魚の品質維持には定期的な鮮度確認が必要である。本研究では、「魚類における鮮度判定の効率化を念頭に、コンピュータビジョンおよびAI技術を用いて、魚類の画像のみによる鮮度判定法の確立」を目的とする。AIによる先端技術を用いて、食品産業・物流分野の発展へ波及効果を及ぼすことを目指す。

Outline of Annual Research Achievements

本研究では、魚類画像のみを用いた非侵襲かつ非接触な魚類鮮度判定手法の開発を行った。具体的には、魚類画像を深層ニューラルネットワークに入力し、深層特徴量を抽出する。その特徴量に基づき魚類の鮮度を推定する。従来法に比べ、本システムの全工程はAIに完結し、魚体を触れずに迅速に鮮度を判定できる。前年度末までの試みにより、魚体領域を全体的に鮮度判定に利用することは高精度な結果を提示できないことに気づいた。その理由として、魚類の鮮度は魚体領域との関連性が弱く、魚体に着目しすぎることは判別器の学習収益を下げる傾向がある。ゆえに今年度では鮮度にセンシティブな魚眼特徴量に着目して、魚眼領域に対する分割結果と魚眼画像を統合して鮮度を予測することによって、鮮度推定の高精度化を実現した。分割マップの情報をネットワーク学習の手がかりとして賦与することで、推定時に判別器は背景に注目せず、魚眼領域の特徴のみの学習を促す。提案手法の有効性が確認され、その成果を国際会議で口頭発表した。また、深層ニューラルネットワークの判定根拠の提示法を改良し、分割ネットワークに対する動作確認法を検討した。その成果を国際会議で口頭発表した。加えて、本課題と関連する画像分割アルゴリズムなどを提案した。これらの研究成果について、国際ジャーナル論文3編、国際シンポジウムにおいて2件を発表した。以上が本年度の研究実績の概要である。
