Outline of Research at the Start

肥満は糖尿病や高血圧に加え、心筋梗塞や脳梗塞さらにはガン発症の危険因子となる。抗肥満ホルモンとして知られるレプチンは、中枢神経に発現するレプチン受容体を活性化させ、摂食抑制効果を示す。研究代表者は、高脂肪食摂取によって惹起される小胞体ストレスがレプチン抵抗性（肥満）の原因となることを明らかにしてきた。本研究では食品中のアルデヒド体がレプチン抵抗性の原因となる可能性に注目し、国際共同研究による最先端の解析技術を駆使して検討する。
