Outline of Research at the Start

クルクミンは抗酸化作用や抗がん作用などの多様な生理活性を示す化合物で、食品・健康分野で広く利用されている。これまでのクルクミン分解・代謝研究は、特に酵素・遺伝子レベルにおいてはほとんど手付かずの状態であった。本研究では、クルクミン代謝土壌微生物やクルクミン代謝乳酸菌それぞれの、異なるクルクミンの分解代謝機構を解明することを目的とする。さらに、本研究によって明らかにする代謝中間化合物の大量物質生産系の構築を目指す。
