Outline of Research at the Start

今日、多くの伝統地方食が食材の入手難や摂食機会の減少などによって危機的状況にあり、それらの記録を残すことが学問上喫緊の課題である。伝統的飲食文化の中でも地域独自の食材と技術で作られてきた魚介料理と酒は、食文化の粋である。
本研究の目的は、①地域の伝統的食文化の根幹を成してきた伝統的魚介類食と酒の文化に関するデータベースを作成すること。②日本全域（和食としての共通性）、地方食、特徴的な郷土食といった地域スケールごとの伝統的魚介類食の展開を解き明かすこと、③伝統的飲食文化を活用した地域振興策を考案することで、日本の食に関する総合的な研究成果を著作『日本 酒と魚の文化地理』（仮題）として公刊する。
