Outline of Research at the Start

最近の研究により、口腔内における油脂の認識機構が少しずつ明らかになってきている。摂取された油脂は舌リパーゼによって一部分解され、長鎖脂肪酸が遊離する。この長鎖脂肪酸がGPR120受容体に結合し、嗜好性発現に重要な役割を果たす。数秒で行われるこの口腔内認識により、動物は油脂の情報を検知し、嗜好行動を制御する。しかし、油脂の乳化状態が嗜好性に与える影響は不明である。この研究では、動物を用いた短時間リック試験により、乳化による油脂の嗜好性への影響を定量的に評価する。

Outline of Annual Research Achievements

2023年度は乳化剤に関する基礎情報を収集し、動物が嗜好も忌避もしない乳化剤の探索に着手した。乳化剤には動物が忌避する苦味のあるものや、一部のショ糖脂肪酸エステルのように乳化剤そのものを動物が嗜好するものがあり、それらは本実験には適さない。いくつかの乳化剤を選定し、調製した乳化油脂を用いて動物試験を行った。乳化に必要な使用濃度で水に溶解した溶液に対し、動物が嗜好もしくは忌避しないことを確認し、実験の目的に合致した乳化剤を選定することができた。

初年度に予定していた乳化剤の選定とその評価に関して一定の成果が得られ、概ね順調に進展していると考えている。

Strategy for Future Research Activity

動物実験に使用する試料の乳化処理最適化条件を探索する。それに加えて乳化油脂の嗜好性評価のための短時間リック試験の条件を確立することが必要である。
