Outline of Research at the Start

塩分の過剰摂取は高血圧、腎疾患、胃ガンなどと関連があり、減塩の必要性が高まっている。塩味はナトリウムイオンと塩化物イオンの両方のイオンが必要であり、単独のイオンでは塩味は感じない。我々はごく最近、舌上の味蕾に特異的に発現し、これをノックアウトしたマウスでは、味神経応答が抑制される電位依存性クロライドチャネル（TMC4）を発見し、塩味の出現にはクロライドイオンが重要であることを示した。しかし、塩味の詳細なメカニズムは未だ不明な点が多く、本申請研究では、クロライドイオンを介した塩味の受容メカニズムの詳細を明らかにし、TMC4を活性化させる化合物を食品成分から見い出し、減塩食品の創出を目指す。
