Outline of Research at the Start

動物は味覚により食行動を調節する。その背景には、舌の味蕾における食物が含む化学物質の受容、脳での味の認識や価値判断のプロセスが存在する。しかし、これら味覚体験の神経基盤は多くが未解明である。どのように多様な味を受容・識別し、価値を判断するのか？本研究では、最新技術を駆使し舌の味細胞から中枢の神経細胞の活動を記録・観測することで、末梢から中枢に至る味覚の受容・認識・嗜好の貫階層的基本原理を解明する。
