Outline of Research at the Start

実際に食する調理加工済みの食品（＝食物）が，人に食による健康機能をもたらすものであるのかを解明する。食物を作る方法として高温調理・加工法を選択し，食品機能性成分としては広く認知されているポリフェノールを指標とする。焙煎の様な高温加工条件で発生する機能性ポリフェノールに基づいて，機能性食物を科学的に解析する。この結果は，高温調理加工法による機能性食物の製法開発にも繋がるものである。
