Outline of Research at the Start

細胞膜を非加熱的に変性させうる強い電気パルスは、新しい食品プロセスとして期待されるものの、細胞への作用と効果については不明な点が多い。本研究では、電気パルスで生じる細胞膜や細胞壁の変性、膜を介した物質輸送のメカニズム、およびそれらの生体構造や環境因子への依存性を明らかにする。その上で、農作物の成分抽出や物質含浸などの現行プロセスの高度化のほか、細胞内機能性物質の非破壊抽出や選択抽出など、新しい食品プロセスとしての可能性を探求する。
