Outline of Research at the Start

イチゴによる口腔アレルギーの有症者が存在するため、アレルゲンは食生活の質の低下や消費低迷につながる。最終目標は低アレルゲン性イチゴの開発であるが、そのためにはアレルゲンの植物における生理的役割を理解し、有用農業形質の損失を抑える必要がある。イチゴの主要アレルゲンはFra a 1であり、発現や構造の解析により生物・非生物ストレスから植物体を保護すると推定されてきたが、機能解明には至っていない。これまでにFra a 1の転写量と翻訳量に相関性がない点に着目し、イチゴの果柄浸出液を調べて長距離移行性があると仮定した。本研究ではFra a 1の果実移行性の証明と、移行に伴う生理機能の解明を目的とする。
