| Outline of Research at the Start |
本研究では沖縄県におけるコーヒー栽培について検証するため、その生長と品質の分析を行い、さらにその結果に影響を与える因子を明らかにしていく。
そこでまず、沖縄県に分布する３種類の土壌を用いた栽培試験を行い、その生長・収量調査を行ってきた。さらに今年度はコーヒーの香りや味に関与する様々な成分について一斉分析と解析を行い、沖縄産コーヒーとしての香りと味に大きく寄与する因子を検索する。その解析結果と生長・収量データや気象データなどの相関について解析を行い、品種や土壌ごとに適した栽培条件を検証する。
得られた結果は生産者や教育現場と共有し、地域農業の活性化と次世代への普及に繋げることを目的とする。
