Outline of Research at the Start

アニサキスによるアレルギーの発症例が世界的に増加し、重篤な症状を生じる頻度も高い。アニサキスによる健康被害のリスクを低減化するために、重篤な症状を引き起こすアニサキス抗原を同定し、調理や加工によりアニサキス抗原を低アレルゲン化できる条件を明らかにする。さらに、重篤なアレルギー症状を誘発するアニサキス抗原中エピトープを正確に解明する。主に、1.アニサキスアレルギー患者の血清の収集と評価、2.アニサキス抗原の調製、3.重篤な症状に関わるアニサキス抗原の同定、4.調理・加工処理によるアニサキス抗原の低アレルゲン化の解析、の４項目について行う。
